Weekly Recipe: Easy Shrimp Scampi Pasta
Hello everyone! This weeks recipe is "semi-homemade" making it very easy to create at home. Normally pastas like these cost over $10 per plate at big restaurants. This one is about $10 total for 4 servings.I made this because small frozen shrimp cocktail platters were on sale at my store for $1.99 each! Then I found scampi sauce nearby for less than $3. Add in some pasta and we have a meal!
Ingredients:
Spaghetti noodles
2 lbs shrimp (whatever is on sale. I used medium sized)
scampi sauce
- Boil the noodles. I broke mine in half to make it easier to pick up with the shrimp.
- Cook the shrimp (if necessary)
- Heat 2/3 cup scampi sauce and the cooked shrimp in a saucepan or skillet over low to medium heat.
- Drain the cooked pasta and add to scampi mixture.
- Toss and remove from heat.
- Drizzle more scampi sauce if needed.
- Salt, pepper and Parmesan to taste
