Pan Fried Tilapia

Not the actual finished product but will be equally yummy |
Ingredients:
1/4 cup oil (I use olive oil)
1/4 cup oil (I use olive oil)
4 tilapia fillets (thawed & patted dry)
1/4 cup flour
1 egg (beaten)
1-1/2 cups panko bread crumbs
1/4 cup flour
1 egg (beaten)
1-1/2 cups panko bread crumbs
Directions:
- Make three bowls - one with the flour, one with the beaten egg and a little water to thin it, and the last with panko. (It is best to line these up in order)
- Warm the oil over medium heat to in a non-stick skillet
- Dip the fish into each bowl and carefully place directly into the heated pan. (I normally cook 2-3 at a time to prevent overcrowding.)
- When you see the fish turn golden at the bottom flip it over carefully.
- Continue to cook the other side for another few minutes.
- Have a plate lined with paper towels ready and move the fish onto it.
- Cover and place in oven or microwave to stay warm. (turned off)
- Repeat for second batch.
Season as desired and serve with brown rice.
Note: You can also use this recipe for pan fried scallops.
